Ingredients
2 slices of rye bread
2 tbsp cream cheese
¼ avocado, sliced
3 big strips of smoked salmon
Squeeze of lemon juice
Freshly ground black pepper
¼ pea shoots
Mokhado Avocado oil to drizzle
Method
Toast the rye bread. Spread a thick layer of cream cheese on one of the slices. Layer the avocado slices over the cream cheese, followed by the smoked salmon. Squeeze a few drops of lemon juice over the salmon and season with a good grind of black pepper. Top with the pea shoots and finish it off with a drizzle of Mokhado Avocado oil. Place the second slice of bread on top, cut the sandwich in half and serve.
