A delicious plant-based meal from @superveganalex using our Macadamia Oil. So easy to make and bursting with flavour!
INGREDIENTS
- 1 aubergine, sliced
- Herb mix - parsley, thyme, garlic powder and cayenne
- 1 cup quinoa
- ½ cup kale
- Handful of spring onion
- Mix all of the herbs together and add Mokhado Macadamia Oil until it turns into a paste
- Marinate the aubergine slices in herb paste and grill until charred
- Saute kale and spring onion
- Serve with boiled quinoa and enjoy!
