Grilled Aubergine Steaks with Quinoa

A delicious plant-based meal from @superveganalex using our Macadamia Oil. So easy to make and bursting with flavour!


INGREDIENTS

  • 1 aubergine, sliced
  • Herb mix - parsley, thyme, garlic powder and cayenne
  • 1 cup quinoa
  • ½ cup kale
  • Handful of spring onion
METHOD
  • Mix all of the herbs together and add Mokhado Macadamia Oil until it turns into a paste
  • Marinate the aubergine slices in herb paste and grill until charred
  • Saute kale and spring onion
  • Serve with boiled quinoa and enjoy!
